Well, maybe one idea, use this style of the dial for the selector? Especially in my case, I have more selections and in the dial is not so nice as a list is too long....
So use up and down buttons to move between values.

I love a thermostat....

It was just idea, for the temp or CO2 meter....

For ex. ppm under 1400 green, up to 1400 red.

Or temp under 21 blue, up to 21 green and over 24 red
