Hi,
I'm new to Domoticz and I was wondering if it was possible to use a secondary raspberry pi to extract the Power / Gas usage data and publish it to the Domoticz Raspberry Pi?

Yes you can. But there is also a very cheap option by using f.i. a ESP822/NodeMcu device.
Someone here uses it to send the data to Domoticz.

Thanks for the reply but I would like to stick with the RPI, since I've bought a P1 USB Cable and Wifi Dongle for it and I have 3 RPI's laying around. Does anyone have an example for the RPI "Slave" for Domoticz?

The function is called 'remote domoticz server'.
You can add it in the Hardware menu.
If needed, the port can be changed in teh Setting menu.

or if you don't want to use domoticz remote server on your secondary raspberry,
you might want to consider using ser2net
and have your main domoticz use a smartmeter over lan.
