Can anyone help me with a manual (website or youtube) how to configure the door sensor AFTER installation in Domoticz.

I have experience with other hardware but maybe your question is also answered with this solution:
My hardware provided two switches, one for off and one for on.
For me it worked by creating an extra dummy (door) switch in the hardware part. And after this I created an event. See attached image. By renaming the real switches with a $ before the name, I now only see the result in the one dummy-switch.

And what happens when you open/close the sensor? Which ID is triggered? I think ID 23?

I think you want the following:
You could remove all the other sensors, and just add or keep 23. Edit the that sensor in the overview of all switches and change it to Door type.
Not sure if that last part works, because I cannot reproduce your situation.

1. Configuring the OFF Delay: (second) (aktuell: 0)
2. Basic Set Level: (aktuell: 255)
2000. Wake-up Interval: (Seconds) (aktuell: 43200)
They report an open / close movement through sensor and access control. Domoticz reports a window open until it get closed again.
Until now had no better idea than to warn about harsh climate from on the balcony. Later they should be added in the alarm setup.

Especially option 2
1 off delay should be 0 seconds?
2 basic set level should be 2000 seconds?
3. Wake up interval should be how many seconds???
Because i don't see it here?

I'm missing that part of hands-on experience. But I think he is talking about settings in the hardware menu:
Go to: Settings, Hardware, Settings of the Z-wave dongle, In device list select the sensor, and scroll down for the settings.
