Could you not use a basic "On/Off Room Thermostat", disconnect the rotary thermostat and connect a BDR91 in it's place?
Without a wiring diagram for the boiler and knowing how Buderus control the boilers it's difficult to comment.

Agree but from the manufacturers website "RFXtrx433XL not available. Unknown if or when a new product becomes available." I can't find any for sale anywhere so I've messages the manufacturer. If anyone has alternate suggestions or for a replacement for the RFXtrx433XL I would be very grateful.

Thank you for this, high quality 5V isn't an issue and I guess I could get the Wemos D1 to drive a dispaly so the NTC's are only connected to the D1.
