When running a beta version is it possible to choose which one you want to update too ?

You can skip beta updates if you want (ignore the update warning). You can also disable the check on updates for beta or stable channel so you do not get the notifications. Then you can update whenever you want. But always to the latest beta version.

In Docker you can update to a beta or stable version there is.

Be aware that going back to an older version is not always supported due to database changes onless you also restore the older database you had.

Also on non Docker installs there is always a full Domoticz folder backup created so you can revert to the previous situation if a beta update failed.

I was looking for a way to be a few beta's behind the current version so that if an issue was reported in a certain beta number that one could be avoided.

When you are using Domoticz via Docker Compose, you can choose which version you want to use.
(But never go back to a previous version! (unless you have a backup))

As mentioned, you do not have to update if your system is running fine, but it is wise do regularly update your system

When you are not running Domoticz in a docker and perform a update, a backup is created inside the 'backup' folder

Another option, stop Domoticz, make a backup of the Domoticz folder, update, see if that makes you happy, and if not, restore the backup
