I recall a time where python3.10 was not supported with Domoticz. Is that now fully supported ?
I understood that python3.7 is going to be End of Live in 5 months from now, and it is probably good that that especially python plugin are starting to move to a more recent python version

I have seen reports of users running python 3.10 without problems so at least it is unofficially supported.
Ubuntu 22.04 comes with Python 3.10.

I'm not aware of any issues with 3.10.
I've done some initial testing with 3.11 on Windows and it looks like that will be okay as well.
