Change thermostat values?

Hi

I have 3 Spirit Z-Wave Plus thermostats.
They also have a node ID and Domoticz has found a lot of values.
Where and how can I change the temperature?
On the Spirit I can adjust the temperature with + and -.
How can I do this with Domoticz?
How could I say, shut down completely or turn it up completely?

There is a Thempertur at Domoticz, but I only see the value, but I can't change it.
What would Cool1 and Dry Air be?
