when/how reset persistant data

Tell me more about persistant data. In the data section you can give an initial value. When does it get this value?
Do you make extra code in case you need to reset?

It will get that value when there is no prior data. Resetting can be done by throwing away (or editing) the data file for your script. See How does the storage stuff work?.
