where in the manual would I find the bit to change the ON / OFF to something else

look in above Image would Like the ON to be replace with the IN and the Off replace with OUT or turn off think the Image tells the story

Nowhere, this is not possible it is hardcoded in the source

Maybe you can use a selector switch instead off a switch, and add a level in and out.
