The short answer is: go for Raspbian.
The long answer is that Raspbian is one of the operating systems available in the NOOBS package, along with Arch, OpenElec and a few others. If you don't know that you have specific needs addressed by any of those systems, go for Raspbian. You can run Debian on the RPi but since Raspbian is a version of Debian specifically developed for the RPi there is hardly any point in doing so unless you know you need to. Same goes for Ubuntu (which also happens to be a fork of Debian with a few addons). If you know how to use Ubuntu on your PC, you can use Raspbian on the RPi without any problems.
Windows is not available for RPi (yes, there is Windows IoT but thats not a desktop OS).

Raspbian "full" is a desktop OS just like Windows or OS X and comes with a number of preinstalled programs such as LibreOffice and Mathematica. Raspbian Lite is just the base OS, no graphical user interface and hardly any preinstalled software (also known as a headless system). Sizewise Lite takes approx 300 MB whereas the full install is approx 1300 MB. However, everything in the full install is available for later installation if you need it.
If you're confident working with the console and don't have a monitor connected the Lite version will do everything the full version will.

If your current memory card is less than class 10 a new one will be faster, the question is how much and if you can notice any difference. There are many different Class 10 cards, from 30-40 MB/s to 95-100 MB/s but again, the question is how much difference you notice between them.
Generally I recommend Sandisk or Samsung, the last cards I have bought have all been Samsung Evo's. The red Evo+ are considered the fastest, followed by the grey Pro cards and then orange Evo's. I have personally not used any cards bigger than 32 GB but there are plenty of online comments from people using 64 or 128 GB without problems. FAT32 supports volumes up to 2 TB so that shouldn't be a problem.
Just buy the fastest and biggest you can afford.
