MQTTAD seems to loose track on MQTT broker ???

For devices supporting the Auto Discovery feature. Like ZWaveJS2MQTT, Zigbee2MQTT.

not exactly sure what I should be looking for
RPI4 Beta / Tasmota / ZigBee2MQTT / P1meter / Haier AC with Node-Red and MQTT / SolarEdge SE3500H modbus_tcp / Opentherm gateway / Plugwise Anna/Smile / ObserverIP weatherstation thru WuDirect

The 1min number of messages/sent and publish/sent is quit big, but should not be a problem (approx. 200 per second)
I still might be that a devices sends bursts, or the Domoticz Hardware, the MQTT Gateway "prevent loop" setting set to false and should be true.
Did you check that?

yes, had that one for a couple of years allready, the famous Waaren helped me with that one while I was writing a nodered script to talk to my Airco
