I'm new to Domoticz, so I am not sure what to searc for and if this is the right tool for what I want to accomplish, so here we go.
I need a tool to control temperatures in different rooms. The temperatures must be changed at different times of the day, for example low at night, high in the morning, low daytime and high when you arrive home. All values and timers must be adjustable from a simple graphical interface.
I have Domoticz installed on Raspery Pi, and have access to a bunch of 5 volt relays and SonOff with EspEasy. Temperatures will be checked using ESP8266 and DHT22 via a dummy device and virtual switches. Have configured a small test environment with one DHT22 and one BMx280, which works as expected. I also have a bunch of Arduino Uno, and can make circuits for different tasks using them.
Is this a way to meat my goals, and if so, what is the next step?

Have a look at this. This will give you a graphical interface for setting times and temps, and will create the timing schedule for you.
You might need to create virtual heating devices though.

I suggest control temperature by ESP not by Domoticz.
Domoticz only for setpoint setting, setpoint scheduling, temperature and usage reporting.

If you are looking for the tool which will eventually control the room temperature, then you should contact with the HVAC contractors who will come and will identify what type of system your home should get installed with. One of my cousins was also looking for the same for his Santa Barbara Home, so he decided to contact the best HVAC contractor from the Website of the Santa Barbara HVAC contractor. Likewise, you should also go for searching the same from the website.

I have had a look at the two sugested links. The first one looks very nice, but mostly covers the ESPEasy part, which I mostly can manage by myself. The problem there is how to implement the graphical window where you adjust the temperature up and down. Havn't got a clue on how to do it.
I agree that it might be a good idea to let the ESP handle the temperatures and only use Domoticz for display, but I still need to be able to adjest temperatures, which is very easy from Node-Red, but I don't want to mix two different applications.

On the web interface of Domoticz you have to type the desired temperature.
The interface on the Domoticz app is different.
Maybe that serves your needs.
