NVR and POE camera issues

Hi there I am writing this looking for some help with my security video camera system.
First off I will tell you what I have with equipment.
I have 11 POE 3mp bullet hikvision HD cameras
I have two POE 8 port switches
I have 32 channel elite NVR
I have a ASUS-N66U router
OK so now here is the issues.I have set this all up and can view the cameras on the NVR fine and it all looks good but when I try to record any of the cameras with motion nothing works. I go back and look and nothing is recorded. Also if I walk in front of the camera there is no alarm even if I set the sensitivity low.
Another question I have is there a app for a I phone that doesn't use wireless to view my security system as I work out of town a lot and would like to be able to view my house. Also if I could get the motion sensor part fixed so it will alarm me on my phone to see what or who is around my home while I am away would be great.
