WiFi / LAN / ???? Interface for 3x NTC Thermistors

Hello, I'm new to the site so be gentle!

I have 3x NTC Thermistors buried inside an external pipe that measure the surface temp, internal air space temp and the temp of the surface of an insulated cold water pipe. These are currently connected to digital readouts but I would lie to log these in Domoticz with a view of toggling a rely based on the live values , but that's phase II.

Can anyone suggest a PoE LAN powered or Wi-Fi attached device that can log the temperature reading from the NTC's so they can be read by a Domoticz server running as Linux VM on a physical Hyper-V host?

I’m open to other communication types provided they can connect to the Domoticz server using TCP/IP as there are no physical port connections and no USB connectivity.

My initial thoughts would be to use Wemos D1 mini with ESPeasy as that integrates well with domoticz, but since you have other digital readouts needing the same data it could be a problem sharing the input.
Also, the wemos needs 5V, so some additional electronics to bring poe power down to 5V would be needed.

Rob,

Thank you for this, high quality 5V isn't an issue and I guess I could get the Wemos D1 to drive a dispaly so the NTC's are only connected to the D1.

Best get a board ordered and start playing unless there are any other suggestions?
