I've got a P1-meter connected to Domoticz. Domoticz logs the electricity usage every five minutes and shows it as a line chart. The gas usage is logged only once per hour and shown as a bar chart. Is it possible a. to increase the log frequency of the gas usage and b. to show that data in a line chart?

The frequency of update usually depends on the type of meter. If it is DSMR 4 then the gas counter is updated once per hour, if it is DSMR 5 then it is updated every 5 minutes. The domoticz P1 gas meter shows values as bart chart. You could use dashticz to make a line chart, although I doubt whether it has any added value. It still shows the value per hour because it is recognised as P1 meter.
If you have a DSMR 5 meter and you copy the 5 minute values from the P1 meter onto a counter device, then you can create a 5 minute graph of the counter device.

adjust logging setting for gas device to log data more frequent manner and for display data you may need to modify the configuration.
