All depends on what you want to do with it.
If you just want to run Domoticz on it you can go for the cheapest Nuc with a small SSD and 8GB memory.
But if you think that you might add other virtual machines to it go for a bigger disc and start with 16GB memory. You can still add more memory to it later if needed. Keep in mind that their are only 2 memory slots. Because I started with 8GB I'm now limited to 24GB, otherwise I have to trow away the first 8GB to go to 32GB.
The installtion of Proxmox is very simple. It's GUI based, basically you just need to click next, next, next and done

All the rest is then web based. Creating a VM is about the same. Next, next, done.

I really added lot's of memory to each machine to avoid swapping and let linux keep everything in cache/buffer.
